Short description
A quick and filling breakfast or light lunch made with tofu, vegetables, and spices. A great plant-based alternative to scrambled eggs.
Ingredients
- 200 g firm tofu
- 1 tbsp olive oil
- 1/2 onion
- 1/2 red pepper
- 1 handful of spinach, optional
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- 1 tbsp nutritional yeast
- Salt and black pepper
- Kala namak black salt, optional
Method
- Crumble the tofu with your hands or a fork.
- Heat the olive oil and sauté the onion and red pepper.
- Add the tofu and spices.
- Cook for 5–7 minutes, stirring occasionally.
- Add the spinach and cook for another 1–2 minutes.
- Sprinkle with nutritional yeast at the end.
Tip
Kala namak black salt gives the dish a more egg-like aroma, but the recipe is delicious even without it.
