Short description
A quick and filling breakfast or light lunch made with tofu, vegetables, and spices. A great plant-based alternative to scrambled eggs.

Ingredients

  • 200 g firm tofu
  • 1 tbsp olive oil
  • 1/2 onion
  • 1/2 red pepper
  • 1 handful of spinach, optional
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1 tbsp nutritional yeast
  • Salt and black pepper
  • Kala namak black salt, optional

Method

  1. Crumble the tofu with your hands or a fork.
  2. Heat the olive oil and sauté the onion and red pepper.
  3. Add the tofu and spices.
  4. Cook for 5–7 minutes, stirring occasionally.
  5. Add the spinach and cook for another 1–2 minutes.
  6. Sprinkle with nutritional yeast at the end.

Tip
Kala namak black salt gives the dish a more egg-like aroma, but the recipe is delicious even without it.
