Short description
A thick and aromatic bolognese-style sauce made with lentils instead of minced meat. Suitable for pasta, lasagna, or stuffed vegetables.
Ingredients
- 250 g cooked brown or green lentils
- 1 onion
- 2 garlic cloves
- 1 carrot
- 1 celery stalk, optional
- 700 g tomato sauce or passata
- 1 tbsp tomato paste
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp smoked paprika
- Salt and black pepper
- 2 tbsp olive oil
Method
- Sauté the onion, garlic, carrot, and celery.
- Add the tomato paste and stir well.
- Add the lentils, tomato sauce, and spices.
- Let the sauce simmer for 15–20 minutes.
- For a thicker texture, mash part of the lentils.
- Serve with pasta or use as a sauce for lasagna.
Tip
The sauce becomes even more flavorful the next day, after the aromas have had time to blend.
