Short description
A fresh, filling, and protein-rich plant-based salad with chickpeas, vegetables, and a creamy tahini dressing.
Ingredients
For the salad
- 250 g cooked chickpeas
- 1 cucumber
- 1 tomato or a handful of cherry tomatoes
- 1 red pepper
- 1/2 red onion
- Parsley
- Salt and black pepper
For the dressing
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp soy sauce or a pinch of salt
- 1 small garlic clove
- 2–4 tbsp water
Method
- Chop the vegetables.
- Mix them with the chickpeas and parsley.
- In a separate small bowl, mix the tahini, lemon juice, garlic, and water.
- Add the water gradually until you get a creamy dressing.
- Pour the dressing over the salad and mix well.
Tip
You can add roasted seeds, avocado, or whole-grain bread for a more filling meal.
