Short description
A fresh, filling, and protein-rich plant-based salad with chickpeas, vegetables, and a creamy tahini dressing.

Ingredients

For the salad

  • 250 g cooked chickpeas
  • 1 cucumber
  • 1 tomato or a handful of cherry tomatoes
  • 1 red pepper
  • 1/2 red onion
  • Parsley
  • Salt and black pepper

For the dressing

  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp soy sauce or a pinch of salt
  • 1 small garlic clove
  • 2–4 tbsp water

Method

  1. Chop the vegetables.
  2. Mix them with the chickpeas and parsley.
  3. In a separate small bowl, mix the tahini, lemon juice, garlic, and water.
  4. Add the water gradually until you get a creamy dressing.
  5. Pour the dressing over the salad and mix well.

Tip
You can add roasted seeds, avocado, or whole-grain bread for a more filling meal.
