Short description
A classic bean stew prepared without animal fat and without a heavy roux. Light, aromatic, and fully plant-based.

Ingredients

  • 400 g dry beans, soaked in advance
  • 1 onion
  • 2 carrots
  • 1 red pepper
  • 2 tbsp oil or olive oil
  • 1 tsp sweet paprika
  • 1 tsp dried mint
  • 1 tsp summer savory
  • 2 tbsp tomato paste or 200 g tomatoes
  • Salt and black pepper
  • Water

Method

  1. Soak the beans overnight.
  2. Discard the soaking water, rinse the beans, and place them in a pot with fresh water.
  3. Once the water comes to a boil, discard the first cooking water.
  4. Add the chopped onion, carrots, and red pepper.
  5. Cook until the beans become tender.
  6. Add the tomatoes, spices, and oil.
  7. Let the stew simmer for another 15–20 minutes.
  8. Add salt to taste at the end.

Tip
For a thicker texture, mash part of the beans with a spoon and return them to the pot.
