Short description
A classic bean stew prepared without animal fat and without a heavy roux. Light, aromatic, and fully plant-based.
Ingredients
- 400 g dry beans, soaked in advance
- 1 onion
- 2 carrots
- 1 red pepper
- 2 tbsp oil or olive oil
- 1 tsp sweet paprika
- 1 tsp dried mint
- 1 tsp summer savory
- 2 tbsp tomato paste or 200 g tomatoes
- Salt and black pepper
- Water
Method
- Soak the beans overnight.
- Discard the soaking water, rinse the beans, and place them in a pot with fresh water.
- Once the water comes to a boil, discard the first cooking water.
- Add the chopped onion, carrots, and red pepper.
- Cook until the beans become tender.
- Add the tomatoes, spices, and oil.
- Let the stew simmer for another 15–20 minutes.
- Add salt to taste at the end.
Tip
For a thicker texture, mash part of the beans with a spoon and return them to the pot.
