Short description
A thick and aromatic bolognese-style sauce made with lentils instead of minced meat. Suitable for pasta, lasagna, or stuffed vegetables.

Ingredients

  • 250 g cooked brown or green lentils
  • 1 onion
  • 2 garlic cloves
  • 1 carrot
  • 1 celery stalk, optional
  • 700 g tomato sauce or passata
  • 1 tbsp tomato paste
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp smoked paprika
  • Salt and black pepper
  • 2 tbsp olive oil

Method

  1. Sauté the onion, garlic, carrot, and celery.
  2. Add the tomato paste and stir well.
  3. Add the lentils, tomato sauce, and spices.
  4. Let the sauce simmer for 15–20 minutes.
  5. For a thicker texture, mash part of the lentils.
  6. Serve with pasta or use as a sauce for lasagna.

Tip
The sauce becomes even more flavorful the next day, after the aromas have had time to blend.
