Short description

This is a high-protein vegetarian recipe inspired by Greek-style gyros. Instead of meat, we use seitan seasoned with garlic, lemon, oregano, and smoked paprika. It is combined with wholegrain pita, fresh vegetables, and tzatziki.

Ingredients for the gyros

  • 400 g seitan, sliced into thin strips
  • 1 tbsp olive oil
  • 2 garlic cloves, pressed
  • 1 tbsp lemon juice
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • salt to taste

For the tzatziki

  • 250 g strained yogurt or unsweetened soy yogurt
  • 1/2 cucumber, grated and well drained
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • dill to taste

For serving

  • 4 wholegrain pitas
  • tomatoes, diced
  • cucumber
  • red onion
  • lettuce or iceberg lettuce
  • parsley
  • a slice of lemon

Method

  1. In a bowl, mix the olive oil, garlic, lemon juice, oregano, smoked paprika, cumin, black pepper, and salt.
  2. Add the seitan strips and mix well until they are coated with the marinade.
  3. Leave them for 10–15 minutes if you have time.
  4. Heat a pan over medium-high heat.
  5. Cook the seitan for 6–8 minutes, stirring occasionally, until it becomes slightly crispy around the edges.
  6. For the tzatziki, mix the yogurt, drained cucumber, garlic, lemon juice, olive oil, dill, salt, and black pepper.
  7. Warm the pitas briefly in a dry pan or in the oven.
  8. Fill each pita with vegetables, seitan, and tzatziki.
  9. Serve immediately.

  • If you avoid gluten, this recipe is not suitable because seitan is made from wheat gluten.
