Memorial Day may be the unofficial start of summer, but I think it’s safe to say it’s also the official start of grilling season. Don’t you love this time of year? There are so many events that just beg for you to gather with friends around an outdoor grill. Don’t think a grill is just for meat either. These days, vegetables can rule the gas or charcoal grill, too! Just think of how inviting your barbeque will be with colorful vegetables filling the plates.
One idea is to throw some Lightlife Smart Sausages Smoked Style and Light Burgers Original on the grill alongside several different varieties of vegetables. Different styles of grilled veggies can make great toppings for either item! Here are the ways that I cook some of my favorite veggies:
Zucchini and Yellow Squash
Slice 1/2 inch thick. Make sure slices are uniform so they cook evenly. Brush with olive oil and grill 2-3 minutes per side. If the pieces are too small for the grill, be sure to use a grilling basket.
Corn on the Cob
Place corn, with husks still on, directly on the grill over medium heat for 30 minutes. This will make the corn so tasty that you can forego butter and just sink your teeth right in.
Portobello Mushroom Caps
Rinse or wipe off dirt. Brush with oil and grill 3-4 minutes per side.
Remove skin, cut 1/2 inch pieces horizontally. Brush with oil and grill 2-3 minutes per side.
After you’ve grilled your favorite veggies, be creative with how to incorporate them in your meal! For example, to make the ultimate mushroom burger, I’d recommend topping one of Lightlife’s Light Mushroom Burgers with grilled Portobello mushroom caps and onions.
