I’m in love with avocados this week (and always). I usually eat avocado at least once a week. For some reason this week though I’ve had at least one dish with avocado everyday! Friday night I just used it as a side dish. I simply sliced it and sprinkled on a little salt.
Saturday I had guacamole in a burrito.
Now today, Sunday, I just went and bought an avocado at the Manhattan Fruit Exchange. The avocados were bigger than I’ve ever seen them. It’s a good thing they are large since I’m going to slice up one avocado to use in two sandwiches. One for my husband and one for myself. I’m going to put it on fresh focaccia with spinach and sundried tomatoes.
By the way it’s worth reminding you that avocados are great for you! Yes they have a rep for having fat in them, but it’s good fat. According to avocado.org “Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit.”
So there you go!
