I am thrilled to say I am officially published in a great cookbook about to be released in stores and on the internet. The book’s name is one you may be familiar with, but it’s new and improved. “The New Greengrocer Cookbook” polishes off the popular book from 1975 and adds recipes from myself and 12 other leading cooks and chefs throughout the country. While the book also features updates on the cookbook’s original recipes from Joe Carcione it actually couldn’t be more in tune with today’s culinary trends. After all Carcione called it the “Green”grocer three decades before “green” cooking became popular. As one of the original TV Chefs Carcione laid the groundwork for all of us who like to cook with vegetables & fruit that are local, organic and all around good for us.
Writing my recipes for this cookbook was a breeze because I have dozens of recipes that fit right in. It features the guacamole recipe that helped me win the TLC show “Dinner Takes All” a few years back. I also contributed recipes involving swiss chard, green beans, beets, spinach and artichokes.
If you still think meat needs to make up the biggest part of your plate you’ll rethink that after sinking your teeth into this book. If you fill your plate with vegetables you’ll feel better about yourself and you’ll look better. Protein can be part of the meal (though I’m hoping it’s vegetarian protein), but let the colorful vegetables make up the bulk of your diet. This book will give you loads of options. You can whip up something new every night and find that eating “green” is never boring. Just think of it this way, our sight makes up a huge part of how we feel about food. Imagine if you just ate animal protein day in and day out. Your plate would always be boring brown. Put vegetables on your plate though and your senses come alive. Green, red, yellow, orange and well you name it vegetables are so colorful they are like a work of art! So follow what your mom told you and eat your veggies.
