Here’s another recipe I put together for a cookbook I’m contributing to:
2 Ripe Avocados (make sure they are just starting to get soft, but not mushy)
1/2 Small Onion
1 large tomato or 2 plum tomatoes
2 tablespoons of cilantro
2 teaspoons of sea salt
Finely chop onion. Dice tomatoes. Coarsely chop cilantro. Mix together in serving bowl. Cut avocado in half. Remove pit by stabbing it carefully with knife. While avocado is still in skin use knife to cut rows. Cut rows up and down and side by side creating checkboard. Scoop cut avocado out of skins and mix with other ingredients. Add salt (add extra if you like it salty). Mix thoroughly, but don’t mash. Serve chunky with tortilla chips.
