Sauteed Swiss Chard with Lemon & Garlic
1 Bunch of green Swiss chard
1 tablespoon lemon juice
2 tablespoons olive oil
2 tablespoons of minced garlic
Fresh ground Pepper
Boil medium pot of water. Cut off bottom of stems (below the leaves). Once water comes to a boil add all the Swiss Chard. This is just to blanch them (cook quickly to retain color). Leave in pot for just 1 minute. Strain in colander and immediately shock with cold water to stop the cooking. Heat olive oil in large saute pan over medium heat. Cut leaves off white stalks. Dice stalks into small pieces (about ¼ wide). Add stalk pieces to hot pan. Add garlic to pan. Chop leaves into 2 inch pieces. Add to pan Stir to make sure olive oil and garlic is evenly distributed. Add lemon juice, salt and pepper to taste. Cook for just about a minute. Serve immediately.
